What is white chocolate?
White chocolate is different from its darker counterpart since it does not have cocoa solids in it.
In the strictest terms, that means that it’s not really a form of chocolate at all! But it tastes so good and works like chocolate does, so I am not quibbling about semantics.
The US Food and Drug Administration has a long article on the composition of white chocolate for the food purists out there.
Even if it’s not technically chocolate, it sure looks good on the outside of desserts and candy!
Even though it has been accepted into the family, according to the regulation by the FDA it still must contain at least 20% cocoa butter, 14% total milk solids and 3.5% fat and must contain less than 63% sugar to be labeled “white chocolate.”
With this composition, it is the perfect component in white chocolate desserts.
