National Eggnog Day & Non Alcoholic Homemade Eggnog Recipe

The month of December gives us so many holidays and national days to celebrate. December 24, in addition to being Christmas Eve, is also National Eggnog Day

Eggnog, the namesake beverage of this December 24 national day, is a holiday drink made of milk, cream, sugar, spices and beaten eggs.

Sometimes alcohol is added to the drink, though it isn’t a requirement for eggnog to contain alcohol. For example, the eggnog you find in stores is non-alcoholic.

There are several spirits that are commonly added to eggnog to make it an alcoholic beverage which is called spiked eggnog. The most popular spirits to add are brandy, rum and bourbon.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 1 1/2 cups heavy cream
  • 2 1/5 cups milk
  • 1/2 teaspoon freshly ground nutmeg
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 4 cloves
  • 2 cinnamon sticks

Instructions

  1. In a large bowl, whisk the egg yolks and sugar together, until combined.
  2. In a saucepan over medium high heat, add the heavy cream, milk, nutmeg, salt, cloves and cinnamon sticks.
  3. Stir until the milk mixture is steaming, but make sure not to boil it.
  4. Remove the milk mixture from the heat.
  5. Slowly and gradually add the milk mixture to your bowl of sugar and egg yolks, a little at a time, while whisking continuously.
  6. (If you add to much heat to the eggs at one time, they will cook, so it's important to add the milk mixture gradually, because no one wants scrambled egg-nog.)
  7. Once all the milk mixture and egg mixture have been combined, add them back to saucepan on the stove.
  8. Stir until slightly thickened, and the temperature has reached 160 degrees Fahrenheit.
  9. Remove from the heat, and stir in the vanilla extract.
  10. Pour the mixture through a mesh strainer into a container to remove the cloves and cinnamon sticks.
  11. Cover your homemade eggnog with plastic wrap and place in the fridge to cool.

Notes

  • Your eggnog will thicken a more as it cools.
  • If you are adding alcohol to your homemade egg nog, you can add this in at the same time as the vanilla extract.
  • Optional garnishes are whipped cream, a cinnamon stick, and a dusting of cinnamon or nutmeg.
