Chocolate-Mint Evergreen Christmas Tree Cookies

These lovely Christmas tree cookies have a mint puffy frosting tree and nonpareil and sprinkles for ornaments.  They would make a great addition to a Christmas cookie swap.

They are great with milk, but for an extra special chocolate experience, serve these cookies with a glass of chocolate milk or a mug of hot chocolate.

Chocolate-Mint Evergreen Christmas Tree Cookies

Ingredients

  • 5 ounces bittersweet chocolate, chopped
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon large egg
  • 1 teaspoon salt
  • 2 1/2 cups flour
  • 1/8 teaspoon mint extract
  • 5 drops green food coloring
  • 1/4 cup unsweetened cocoa powder
  • Colored sugar, nonpareils, sprinkles and dragées, for decorating
